Lazy Sunday

Vegan Grilled Cheese

I look forward to the weekend all week. Not that my job is so miserable that I countdown the clock everyday, but there is just something about knowing that I don’t have to work that makes me happy.

Sometimes I think my dogs know it’s the weekend too. They get up a little later, they find new and interesting places to sleep, and they get more treats. My dogs are pretty smart, so I am pretty sure they know what’s up.

Since I was feeling super lazy today, I was feeling something easy and delicious for my chubby vegan lunch. Perhaps a comfort food that just makes you feel good inside.

GRILLED CHEESE

I have a love hate relationship with vegan cheese, but when it comes to Daiya my feelings tend to sway towards love. I was mindlessly searching the Internet last week and saw another vegan blogger talk about making vegan grilled cheese with Daiya. It looked pretty rad and I really wanted to try it. I think she used the cheddar version and all I had was mozzarella, but a chubby vegan has to do what a chubby vegan has to do.

She also made hers with pickles and slices of tomato that, in my opinion, is the only real way to eat grilled cheese. Sadly, I didn’t have any tomato so I subbed with a little bit of ketchup. Don’t hate.

On a scale of 1 to the best thing I ever ate, I would give it a super delicious. That is pretty much a 7.

Vegan Grilled Cheese


-Two Slices of Vegan Bread
-1-2 T. of Earth Balance Vegan Butter
-1/4 cup of Daiya Cheddar Cheese (or mozzarella)
-Pickles (as many as you want)
-Tomato (one or two slices)

Add half of butter to one side of a slice of bread and place it (butter side down) on a skillet on medium heat. Add the cheese, pickles, and tomato. Lay the other piece of bread (butter side up) on top of the cheese.

Grill for about 3 minutes. Delicately flip the sandwich over to grill on the opposite side for about 3 minutes. 

Check and see if the cheese is melted. Pull off the skillet and tear it up.

  1. I had a grilled cheese this weekend too! The vegan version looks good enough to try....does it taste similar? Or should it be named something different? How does vegan butter taste??

  2. I too am a chubby vegan. Even though I normally shy away from the fake cheese stuff, I might have to try the Daiya. The pics are making me hungry!

  3. @Chell... I sometimes have issues with "fake" cheese too. I think Daiya is really, really, really good though. Give it a shot, i think you will really like it!

  4. I am a Daiya convert thanks to The Chubby Vegan. For block cheese, I'm still a Follow Your Heart advocate. I have never had pickles on a grilled cheese. What a tragedy! Will definitely try next time. And the tomato is CLUTCH.
