For the Love of (Stuffed Crust) Pizza


 Who doesn't love Pizza?

That greasy mess is as American as credit card debt and shopping at Wal-Mart. But, alas, I am a pizza fan. Ever since discovering that Papa John’s original crust pizza (sans cheese) is vegan I have been spending a bit too much time on the pizza train.

Then I saw this lovely from one of my all time favorite food bloggers, Meet the Shannons.

Mexican + Pizza = quite possibly the best food combo since Peanut Butter and Jelly.

I made a few minor adjustments from the original recipe, but nothing major. The result is nothing short of a pizza miracle. I officially bow down to this Shannon family masterpiece.

V.I.L.F

Vegans I’d Like to…

Well, you get it.

It is so great how many cool vegans are out there with blogs, websites, books, ‘zines, vlogs, twitter, facebook, pamphlets, chalkboards, markers and paper, or whatever other forms of communication they want to use. I am just happy there are so many of us out there being awesome. I am vegan proud!

Some of these awesome vegans happen to be pretty darn sexy too. I know I am one of them, but there are so many others! *wink wink*

This gave me an idea in my big chubby brain. Let me use my humble platform to share some of these super sexy vegans with all of my loving CV readers. Presenting my first V.I.L.F:



Holy swoon! This guy makes these really fun videos cooking amazing looking vegan “bar” food. Vegan mozzarella sticks, pizza rolls, Philly seitan steaks, and the list just gets even more delicious.

So let’s break it down… A guy that is a little bit punk rock, tatted up, vegan, a big dog lover, makes amazing vegan food, and is a certified vegan McSteamy… where do I sign up?

So check him out! His videos are great, funny and his recipes are all pretty basic and fun. Love, love, love it!

Whole Wheat Pizza

I think the last time I made pizza from scratch was in home economics.

Oh home economics, how I love thee.

The people who didn’t take home economics were so missing out. Who else got to eat fun foods during the middle of the day! It’s where I first learned to make cookies from scratch, monkey bread, biscuits and my own pizza. I should go back and teach vegan home economics… I could teach all those young minds about the joy of tempeh, nutritional yeast, and raw cheesecake.

Think of the possibilities!

Well, until then, I will just share you with a super easy pizza dough recipe that brought me right back to home economics. This recipe came from husbands’ mom, who I will call “Mom in Law.” She is not vegan, although I feel like if she lived with me for more than a week I could sway her… *wink wink*

This particular pizza is "upside down" because I used cheese (teese) on the bottom and layered sauce and toppings over it. Why? Why not?
