S'mores Stuffed Chocolate Chip Cookies


Have you ever heard of the website, “This is Why You’re Fat?”

It is pretty much the most ridiculous food items that people prepare for no reason other than to grow their waistline. Really, who in the world needs a bacon sandwich using Krispy Kreme doughnuts as bread?

Nobody!

Every now and then I see something on the interwebs that makes me go, “hmmmm.” One of those recipes that I think, "this is why you're chubby." I stumbled across a recipe for a s'mores stuffed cookie the other day. Yes a s'more, stuffed into a cookie. What?!

After my initial rational reaction I thought, “Wait, I bet I could make that vegan.”

This would accomplish several of the things on my recent to-do list.
  1. Attempt to veganize a non-vegan recipe.
  2. Try vegan marshmallows.
  3. Make a cookie larger than most newborn babies.

Victory!

This is the most absurd cookie (read: 4 cookies) you will ever see in your life. To be totally honest, I didn’t really “veganize” anything, I just constructed something using vegan ingredients and a recipe I already love. So take that as you will.

But, without further ado, presenting the vegan s'mores stuffed cookie.

S'mores Stuffed Cookies
Concept and Inspiration: Picky Palate

2 tbsp ground flax seed (flaxmeal)
3 tbsp water
1/2 cup vegan margarine
3/4 cup sugar
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup vegan chocolate chips (preferably mini chips)

Preheat oven to 350°F.

In a small dish, mix together the ground flax and water. In a food processor or large bowl, blend or mix together the flax mixture, margarine, sugar, and vanilla until smooth and set aside.

In a large bowl, stir together the flour, baking powder, baking soda, salt, and chocolate chips. Add the margarine mixture and stir until well incorporated.

Roll dough into about 22 balls and place on a plate or pan lined with parchment. Set aside.

The S'mores

4 Vegan Graham Crackers (I used Keebler original)
2 chocolate bars (I used boom choco boom)
12 small vegan marshmallows

Gently break apart each graham cracker into four pieces. The graham crackers can be a little tough to break along the lines, but no need to be perfect.

Break each piece of chocolate into an individual wedge, and then make a small perforation into the wedge and snap it into 2 smaller pieces.
Assemble the s'mores like any other smore: graham piece on the bottom, two marshmallows, and two small chocolate pieces on the top. Cover with another piece of graham cracker.

Repeat until you have about 5-6 complete s'mores.

The Construction

Take four of the cookie balls you rolled out and flatten them each out slightly with your hands. Start by placing one on the pan and then add a smore on top of it. Add another cookie dough ball on top, one of the left side, and then one on the right side; completely covering the s'more.

This is when it gets tricky.

Try to mold the dough around the s'more as much as you can until you can no longer see any of the s'more. It should look like this…
The complete cookie should be pretty big. I put two on a pan (lined with parchment) and that’s it.
Bake for between 16-20 minutes; checking after 16 to see if they appear to be cookie like and not just a giant blob.

When they are completed, take them out of the oven and let them cool on the pan for about 10 minutes. If you want, transfer to a cooling rack.

Makes around 5-6.

Eat them and then go to the gym… You will need too!

Chubby Vegan Notes
  • Do I think these are the best in the world, maybe? But are they conversation pieces… sure are!
  • The cookie recipe is totally the same as the Chocolate Chip Coconut Cookie recipe from Sarah Kramer, without the coconut. 
  • I think this puts giant bakery cookies at Starbucks and other places in perspective. These cookies are equivalent to 4 normal home sized cookies. WHOA!
  • I used Dandies vegan marshmallows, which were surprisingly chewy and super good. 
  • Don’t be alarmed if your cookie is flat on the side and looks like it has a growth in the middle. Half of mine blended beautifully and the other half had an obvious filled center.
  • The graham crackers sort of melts into this recipe; I barely tasted it. Just an observation...

  1. I have made a s'more cookie before by just baking choc. chip cookies and in the last few minutes, putting a marshmallow on top and then drizzling with chocolate after. seems much easier and probably tastes the same (amazing)

  9. This. Looks. Awesome. I haven't had a marshmallow in nearly 7 years after becoming veg and I miss it. I have to hunt down those vegan marshmallows and indulge!
